INGREDIENTS

WILDINGS PRODUCTS:

Lemon, Parsley & Shallot Infused Organic Quinoa 2 cups

Arabian Pomegranate Dressing

FROM THE SHOPS:
Lebanese cucumber x 2
Tomato x 2
Dried currants 2/3 cup
Toasted almonds 2/3 cup
Red onion 1/2
Fresh coriander bunch (chopped)
Fresh parsley bunch (chopped)

METHOD

Bring water to boil & add Wildings Quinoa blend and reduce heat to a simmer, cover and cook for 10-15mins, leave to cool with lid on. Soak dried red currants in Arabian Pomegranate Dressing. In the meantime, finely slice red onion, add diced tomato and cucumber. Mix with quinoa blend, currants and almonds, then add a handful of chopped parsley and coriander, drizzle with Arabian dressing.

SERVING SUGGESTION

Serve with any BBQ meat or fish.
